No, it isnt hard to install just read the instructions. I would suggest just running two hard drives if you have the slots available then you don't have to worry about transfering everything.
On a side note my friend has a serious grudge against Maxtor hard drives because he has had two die in the last year and one of them caught on fire. I'm not saying it will happen to you, but I thought it was funny and laughed at him.
Caught on FIRE? I'd take a look at the power supply on that box.
Really tho, Maxtor once upon a time was crap, in the mid to late 90s their drive quality was horrible. Since then they have improved drastically, and in my opinion are better drives than Western Digital, who has gone downhill rapidly since their peak of quality during that same time frame.
We have the maxtor "one touch" external hard drives at work. They're a piece of crap. One died within 2 months of me opening the box (which I found sitting on a shelf for 11 months - so it was out of warranty).
Once it died I left it plugged in for a day (was still trying to get data off of it. The thing was whining when I came in the next morning. I unplugged it and opened the box to see what was wrong.
The HDD was so hot that I couldn't touch it. I actually wound up with little burn marks on my fingers from making that mistake....

My step-mother's been using one for about a year without any problems.
I have lost a few WD's. Seagates are excellent drives, and I love the sound they make when you have a couple in your box. Haven't had a maxtor, but my dad owned a few of their CDROMs and said they were crap.
I've used Maxtors and Seagates (currently 2 seagate SATA drives in striped mode RAID, can't remember which mode that is... 1?) and have never had an issue with either brand. WD is another story, and a long one at that.
