why is it bad to run the engine without valve covers??

Are you being sarcastic? If you arent, its bad becuase you will leak oil all over the place. The oil is is fed to the valve springs and rockers thru the push rods and then recycled back through the motor. Without the valve covers the oil wont get recyled back through the rest of the motor. If you notice in that video, there is no oil seaping out, which is why you hear that horendous ticking noise, that sucker is damn near out of oil.
