I don't uniformly say "Merry X-mas" or "Happy Holidays". I say what is appropriate to the person I'm talking to. In generic situations, it's Merry X-mas. To my friends, it's, no joke, Merry F-ing X-mas.
Merry Christmas. And when I see an X-mas, I point out that it should be Christ-X.

You do know that "X" means "Christ" right? It's not an attempt to take Christ out of Christmas, X is how they used to spell Christ's name. "Christ" was often written as "XP" or "Xt"
