I don't even really know "fight the ticket" means. Am I supposed to claim that I wasn't actually going that fast? Call the cop incompetent? Say it wasn't me?

If I were you I would argue that if the cop couldn't get your age and sex right, he/she probably couldn't be trusted to get the speed you were travelling at right either. Although I don't know about speeding tickets, I've heard of several parking tickets being dropped for similar reasons (for example, the colour of the car marked on the ticket was wrong).
Contesting the ticket means you claim you are not guilty. When you go to court, if the cop doesn't show, it gets thrown out. If the cop does show, the cop/DA/Judge may offer you a lesser charge to plead guilty. You take the lesser charge and be happy. I've done this 30 or so times in several states and it never fails. Most of the time, they drop it so no points show up.
I got a 50 in a 35 in VA. I just paid it b/c it's a 12 hour drive to go to court.
I would just to be an *** about it but no they probably won't appreciate their mistake being pointed out. It usually does no one any good to point out others mistakes, it's just fun that's all. You could really screw with them and go in with a wig on and dress like a girl, you probably don't want to go that far with though.

Search around there, and if you dont find a good answer for how to fight the ticket, then register and post. There is a few lawyers on the site that have a good record of giving people enough information to fight (and win) tickets themselves.
Usually to a non-moving violation (cheaper and no points). Most of mine have been dropped to bald tires or failure to adhere to a traffic control device. sometimes the fine gets thrown out, and they just make me pay the court charges.
