I'd buy it back from the insurance company, and repair it at your leisure with the parts you want to use. Do a ls swap w.e the car shouldnt cost you much of the settlement you get.
If your insurance is anything like mine then it should olny be a 500 dollar buy back on the car. When Insurance companies (At least in Canada cant say for the US) write off a car they payout the insured and then sell the car for scrap price. Which depenedant on the year of the car is no less the 500. I just last year went through an insurance claim for a 2000 Intriped in A1 shape that got totaled by hail I could have bought that car back for 500 from my insurance company.
I wish this would happen to my f-body.. It would be an OPPORTUNITY for a new car and a V8.... Also, i wouldn't pay anymore than $2500 for that V6 mustang you mentioned.
You can get a ls1 camaro/firebird for that price.
