at first glance...this may not be complete list....

          Save and use your 1997:
Intake (manifold possibly...definatly TB and air intake system)
Fuel Rail and Injectors and 1997 injector harnes, etc. (the 2000+ injector and fuel rail are completly different from the 1997...completly.)
Exhaust manifolds...unless you can convert the AC and stuff to the 2000 tubular manifolds...more involved than it sounds...someways harder than just getting headers)

The ingintion box (distributor) looks similar but it is not the same (wireing is different) so suggest sticking with 1997 ignition.

Your 1997 may have 2 wire O2 sensors, for example, but the 2000 might have 3 wire 02 sensor... etc.

Make visual inspection of manifold vacum ports and etc. and swap out as necessary.

Use the 97 sensors and stuff with your cars 97 PCM and harness.

Save the other parts like ignition coils, starter, alternator, etc as 'surplus.'

Don't be in a hurry to throw anything away from either engine until system is up and running with no goofyness.

These are a lot of parts that would come off during an engine install anyway...taking off the intake manifold and the ingition box makes it easier to fit the engine under the cowl, for exhample.
