im making an arcade stick (my other hobby is videogames, big time) for a friend, so just polishing it up probably wont hold up to the constant sweat/oil from your hands.
You aren't going to like my opinion but here it is. Take the whole thing apart and have a sheet of glass cut to go on top of it. Then you would have to redesign it so the extra thickness of the glass could recess like the metal is now. It would look even better and would last a hell of a lot longer. You could also make it out of a clear plastic but it would scratch a lot easier than glass. Make sure you use rubber washers on either side of the glass (if you use it) so it doesn't crack when you tighten down the screws/bolts. I'm not positive on how easy it would be fore you to do as I can't know that that is assembled. The only other way is to spray it down with a lot of clear and hope it holds up. You will notice that no arcade machine uses metal for that portion though and I think you have realized why. Good job though, it looks pretty killer already.

most arcade panels are metal, they just have some kind of overlay.
i have no means at all to cut glass, and theres no way to recess it. i had considered using plexi, but not being able to recess it would just make it look bad.
im just gonna polish it up and clear it and hope for the best.

I'm sorry I said that wrong. You are right, they are made out of metal but it's not the finished surface as you said. Just make sure you get a good coat of clear on it and then wet sand it to smooth if you want to go nuts.
