I have a 2000 camaro 3.8L with 18x9.5" Z06 rims and the rear end has 3.73 gears, and soon to be installed an Auburn Pro Series differential. With the 18's on I notice a bit of a power loss because it takes longer for the car to get moving on the larger wheels. Is there any thing else that I can do without switching rims everytime I want to race?

In all reality, unless you have tons of power to overcome your traction issues, you just won't go fast on 18s. They are heavy, and the really small sidewall works against traction. Look into grabbing a set of drag radials and some 16" stock rims for the track.
