I'm not sure what your question is really. The Fbodies didn't have 5 speed autos because General Motors didn't have any five speed units to put in them.

its not just f-bodies, just in general. why arent there 5 speed autos out there? cruising on the highway at 2500 RPMs would be alot better if it was 1200-1500 RPMs instead, no? is it due to the limitations of the design of the automatic transmission?Comment

Because a 5 speed automatic is expensive. That's about the easiest answer there can be.
The 4L60E is the workhorse of the general motors fleet. They figure if you want performance, you'll get a stick and save a little money.

The Jaguar XK8 also has a 5-speed auto.
