In the mods encyclopedia, there are disc and pressure plate kits listed for Ram and Centerforce but where do I find a good flywheel made of steel. I want to stay away from aluminum and cast iron versions. I explored their respective websites and found no info on flywheels. Even if the flywheels for the newer 3800s are the same diameter, does anyone know if they have the same bolt pattern?

With flywheels your best bet is just get a new stock one and take it to a race shop and have them lighten it. Most ppl don't bother with flywheels for our cars.
