alright.......so i just ordered two 10" Infinity reference subs. They are both dual 4 Ohms....that give me a final load of either 4 Ohms.......or 1 Ohm.........each sub is 250 Watts.....giving 500 watts.........what would be a good amp to power these subs?

You should be able to wire it down to 1 ohm, but it puts out the same watts at 2 than it doest at 1 ohm.
Keep in mind the JBL 1200.1 is under ratted, someone i know bench tested one and it put out 1,480 RMS @ 2 ohms.
But dont you only need 500 watts? i think this amp would be enough to power both of your subs.
