on my last setup i used 2.5" piping for the charge pipes, but im wanting to make 600hp eventually, should i step up to 3"? or should 2.5" be big enough?

Whats the specs of the turbo your using?, then from that we can see how much cfm it will be putting out. Becuase you can run 30 PSI off one turbo to get 600 hp and 20 PSI off another and get 600 HP. But like insaneABOT said 3" is the best way to go, there are at least 5 people running 3" pipe making 600 at the crank. You'll need probably 120lB injectors and dual walbro 255's just for fueling.
