I figured forced induction cars would know it the best so.. whats a good serpentine belt length and route if I want to do away with my air conditioning?

so are you NA or FI?
Take a piece of kite string and wrap it around, then measure that for your length. Maybe go .5" shorter so you get some good tension on it

What kind of FI are you getting?
If it's Powerdyne then it would be hard to set it up without the AC pulley.
The twin Belt Procharger that Jen or Pathogen use would work great. But the Mach Performance Procharger one also needs the AC pulley to make it work properly.

Its 6 rib by 61", autozone part number is 610K6, but I will tell you this their will be a lot of chatter with the way you route the belt, so some people opt for a bigger tensioner pulley to get more of the belt on the pulley.
