A while ago the car had the 195 thermostat changed out for a 180 thermostat, and the PCM updated to lower the fan on/off temps accordingly. Everything is working fine, but sometimes when the motor hits about 4000 rpm, it feels like its misfiring until I do it two or three times. Then its fine for a while. Wondering if the plugs are loading up and should be changed to a hotter plug?

I haven't heard of anyone swapping plugs due to a thermo change. Your engine is still going to get up to the same temps, it just takes longer as the thermo is opening sooner and fans run earlier.

ive never heard my fans come on ever unless i turned them on manualy with hptuners. and i run 190-95 all the time it didnt change when i went from copper plugs to Iridium

Stock fans will come on at 220 degrees first stage an 230 degrees second stage, unless the A/C is on, reprogramed, or manual fan swwitch.
