I've been searching for awhile now looking for a 160 degree thermostat for my 3500 motor. So far I've found a 180 degree which is in the car now, I've even tried a lt1 160 degree but it's a totally different size.

IDk if the 2.8 engine closely resembles your 3500 60* motor, but there's a 160* stat for it:
