Yeah, when I use 87 and I floor it the car will speed up then slow, then if you let up a little it will speed up again. I guess it's the knock sensor retarding timing so It won't ping. When I use 89 or 93 it runs fine. Wussup?

you're not going to get the timing you want on regular old 87 octane.
yes, 87 octane is what they say to use, but then again, they (GM) don't really think anyone is going to regularly be hot rodding/WOT'ing their V6.
the higher the octane, the higher resistance it has to burning, IE it's not gonna burn as quick, meaning less heat can get outside the combustion chamber to cause KR...
if anyone knows otherwise, please correct me, as this is how I understand how it works.2011 Camaro LS 6M, in black.

The knock sensor is a "microphone" that "listens" to the sounds made during combustion events. The amount of heat generated does not really depend on octane number. Lower octane will ignite more easily than higher octane. It also burns faster. This is why you can't have as much compression or timing advance with lower octane.
