When I'm driving if I step on it sometimes the car will take off like a rocket, and sometimes it will just dog. Is this normal.

depends on what speed you're at. if you're doing it at a low speed you'll feel it more, but if you're going faster you wont. Also if you have a m5 it depends on your shifts. So yes its normal. -
