How can I use the deep creep seafoam in the throttle body with the maf screen in there and not having to take off the whole throttle body?

The best way is to remove the tb. It doesn't take that long. But if you're too lazy to do that, take off the maf screen and remove the maf sensor. Then the only thing left in the way will be the tb blade.

does the screen and the sensor just pull off or is there a certain way to get it off?

The screen can be taken off using a pair of snap ring pliers or even a paper clip. Just insert the end of the paper clip into the hole on the ring, and you should be able to pry it out. The maf sensor is held in with a couple of screws, so take out the screws, then it just pulls out. I would say definitely remove the sensor because cleaning chemicals and electronics don't mix well.
