Will 1LE and Jest Stage 2 give me what im looking for.
Im looking to get up to 60 in a hurry. Would the Jet Stage 2 and 1LE DS give me some more noticable power, and a better launch, or do people just say it does and it actually doesnt??

You'd get more noticeable power with a new camshaft...you can specify what area of the engine you want to beef up...low end torque, midrange or top-end. I'd do that over a jet chip...i've heard many people say the money is not worth the small gains. Now a 1LE driveshaft will not really add HP persay, it will reduce the rotating mass therefore transferring poer to the rear wheels more efficiently. This helps you to recoup lost horsepower from the engine.
