Does the oil change indicator light in our cars measure the amount of miles since its last reset or does it actually measure viscosity of the oil and decide when it needs to be changed ?

It can't measure viscosity. It uses a formula the engineers derived that uses average engine temperature, RPM, and throttle position to calculate when the theoretical breakdown of your oil occurs. So if you drive all highway and hardly ever punch it, it won't come on till nearly 7500 miles which is the maximum interval.
