engine temp. question

Where should the engine temp gauge in my car stay? I believe it has the stock 195 (i think?) thermostat.. and no leaks, it did have a manifold leak but i got it fixed.

My temp gauge stays at around 210 (half way) all the time after ive run for a little bit..

But if you take one of my step dads z28's out.. all hes got done is flowmaster and Hypertech programmer III /w 160 degree thermostat.. and his never passes the 1/4 mark on the temp gauge.

Is this normal for my v6?
