If I hollowed out my cat as opposed to just replacing it, will this give me a ses light AND put my car in limp mode? The light comes on after about 5 minutes of driving at any speed. Once the light comes on the car runs bad. Its a 95 with a 3.4

No... you don't have post CAT 02s like the obdII cars do.
Your problem half sounds and most likely is an EGR problem...
do a search on the exact symptoms of a bad EGR on a 3.4L, I don;t remember then all, sold my 94 2 years ago and I never had egr problems.
