I was driving home from my gf's house just now,
and I watched it the whole way. It took forever to get from 160 to 180, then just bounced around around 180-190. How long does it usually take to warm up?
Also, it was cold out here tonight, but I don't think I've ever seen my car hit 210

I think it's got something to do with the cold weather. My car generally stays right around normal operating temp. But tonight, it was really cold. I looked at the temp about 10 minutes after I began driving and it was about 3/4 of the way to the right...in a minute or so, it jumped back down very low, then it just went back to normal.
