Lately when I've been driving I've beeen taking my 1999 y87 up to about 5.5-6 thousand rpm's a lot. Am I putting my engine through too much stress, and about how hot should the engine be running?

It should run a little below the 210 mark but can occasionally go over. Yes, running a car to redline will put more stress on an engine than never taking it over 3k, but as long as you change the oil regularly and take care of it, it should last you a while.
