AAhh, I knew there had to be some logical reason - I was considering doing the conversion on my 99' Camaro, 3.8 liter, but I guess I will save my time and money.

I have also been curios about this 160 degree thermostat conversion. Could anyone tell me, is there anything special that you have to do, other than installing the thermostat?

You just have to replace the thermostat.
