this is concerning my custom programming, what should i get done for fan speeds and with this done should i still get the on off fan switch?

This is what the hypertech III manual says about fan temps:
V6 Camaro/Firebird Stock Cooling Fan Temperatures:
Low speed fans on/off at: 227°F/218F°
High speed fans on/off at: 235°F/228F°
- OPTIMIZED FOR stock 195° Thermostat
V6 Camaro/Firebird
Low speed fans on/off at: 209°F/200°F
High speed fans on/off at: 219°F/210°F
- OPTIMIZED FOR 180° Hypertech PowerStat
V6 Camaro/Firebird
Low speed fans on/off at: 194°F/185°F
High speed fans on/off at: 204°F/195°F
- OPTIMIZED FOR 160° Hypertech PowerStat
V6 Camaro/Firebird
Low speed fans on/off at: 184°F/175°F
High speed fans on/off at: 194°F/185°F
If you're gonna go racing, the manual switch is good also - turn the fans on whenever you want, even when the car is off.
