On a N/A engine I would prefer my engine being 195 rather than

That's exactly right. As my temp has become lower and lower over the past few months, so has my gas mileage. I am thinking that getting it back up to normal operating temp might improve the MPG.

Your right except for power. Actually the colder the engine the more power it produces. A 3.8 engine at 10* probibly has as much as 10 more HP/torque than it does at 180* it just wears the piss out of the engine running it cold. All the guys at the drag strip that know how to squeeze every extra bit of HP out of an engine will push their car through the staging lane so that their engine will be as cold as possible when they race.
I am in need of a new thermostat. The one in the engine now is stuck open and the coolant temp will barely get above 100. I do not want the stock 195 degree stat, I would rather it run a little cooler. I have read many threads on this but I am wondering what you all suggest. Does the ECM/PCM operate normally at 160 or is that too cool? I would like opinions / suggestions whether I should install the 160 or the 180.
Also, does it use a rubber seal, or a paper gasket?
You could run your car with no stat at all and it would still get to 190*. If your guage is not going above 100* then you probibly have a bad water temp sensor. Im not saying you shouldnt change your stat if you want to go with a cooler one, im just saying if your temp guage doesnt go past 100 its bad or a bad sensor. Oh and Autozone has 180* stats in stock.

I should have been more clear on that. It will get up to full temp at idle, not driving. Once I start to drive it and cool air passes through the radiator the temp drops to about 120-140. The temp gauge is working properly. I need the new thermostat so that the car will stay at proper operating temp.
I went to Autozone today and bought a 180 degree thermostat and a new rubber seal. I will install it in a few day when I get a chance. It is the "Fail Safe" type, when it goes bad it will get stuck fully open rather the getting stuck closed.
i have a 160* t-stat. in the winter you will stay pretty darn cold, but in the summer/spring/fall you will heat up just fine. in the summer with my 160* t-stat, new radiator, and fans cutting on earlier, i can still reach 215* when im stopped or have been running hard. 180 or 160 doesnt matter unless you get your pcm tuned to have the fans cut on earlier anyhow.

See, I know my car runs cool, but I live in Miami. Right now it is pretty cold at night, but other then that it is always very hot. During hot days with the fan running (A/C on) the temp hovers around 140-160. Now that the weather is cooler it hovers around 100-120. Now I am second guessing whether or not I should even change it. I don't want the car to run too hot. With the 180 thermostat and the fan on shouldn't the temp stay right near 180???
I only have a few more weeks and it will be very hot once again down here.
Not much going on, replaced my Kenwood double din stereo with a Pioneer double din, the Kenwood had problems. Then replaced my power inverter for my reverse...
