When I start my car my SES light flashes on real quick... is it supposed to? I thought it was supposed to stay on a little longer like 2 or 3 seconds.
I assume if its throwing a code then I wouldnt be able to pass inspection at a local garage here in NJ right?

Flashing SES means something that could damage your catalytic converter...usually a misfire that dumps a bunch of fuel into the exhaust which overheats the cat.
Oh... I have an 02 simulator and I wasnt sure if the SES light was lighting up the same was as before I put my exhaust on. Its not like the light stays on but if they have to scan it then I guess I am screwed?????

If it comes on for a second or two when you start the car and then goes off and does not come back on then it is nothing... that's normal. If it's flashing on and off or burning solid then there is something wrong.
Yeah, if it only comes on for a second on start up, thats because it is supposed to. If it doesnt come on, its burned out. It sorta lets your know if your SES light is working or not.
