From what I've heard the catalytic converter creates chemical reactions which have to occur at certain temperatures, if I have a cold air intake would it alter intake and exhaust temperatures and if so could this damage the catalytic converter?

You may be taking in colder air, but that really isn't going to change the operating temp of the engine all that much.
Cats may only work in a range, but its got to be a pretty decent range, for all the temps that cars are used in.
