On a '98 3.8. Am I going to need "hi-temp boots" for the spark plug wires so they don't melt?

You may need one. However you should be able to get away without as long as you reroute the wires as close to stock as possible. If you can, you should change the plugs and wires while the manifolds are off.

ha, While the manifolds are off I'm changing the spark plugs, wires, camshaft, valve springs, retainers, pushrods, gaskets, oil, coolant, and getting a Texas Speed tune. ;)
