I was wondering if you really need a Fuel Pressure Regulator for running Nitrous. I am going to be geting the Nos 5175 Kit quite soon and want to be safe so I can run a 75-85hp shot..

No he is talking about an adjustable fuel pressure regulator.
NOS intended this bolt on kit to work completely fine with the 85 shot. The kit should not need any fuel or ignition upgrades at all.
A fuel pressure safety switch is there if the fuel psi drops it will cut the nitrous off to prevent the engine from running leanRace car - gone but not forgotten - 1997 firebird V6

What about running colder plugs like the NGK plugs?
