Here is an overview of the MSDS sheet for Nitrous Oxide, CAS # 10024-97-2.
"Nitrous Oxide CAS#: 10024-97-2
Emergency Overview
Colorless gas; slight sweet odor. Inhalation of small amounts causes euphoria. Higher levels cause drowsiness, incoordination and unconsciousness. Contact with the compressed gas can cause frostbite. May present a reproductive hazard in women. "
EDIT:
Just to add, that is an MSDS sheet for Nitrous Oxide -- automotive nitrous has Sulpher Dioxide added so it probably smells like sulpher.

Thanks guys.. the reason I'm asking is because I accidentally left the bottle open and the nitrous emptied out. Does anyone know where the nitrous goes when that happens?? Does it just evaporate into the nitrous line and into the passenger's compartment from underneath the bottle opener somehow??2004 CE Corvette 10.86@132mph

I'm still sort of a newbie, so this may be bum advice, but maybe you have a leak in the system somewhere?

Don't worry about it.
It just evaporates into the air.
Light a match? I would have no problem walking up to a fire and opening up my nitrous bottle and aiming the nitrous cloud straight onto it.
It is an oxidizer, it supports combustion but does not promote it.
It is true there is a slight sulfer odor.Race car - gone but not forgotten - 1997 firebird V6

The sulfer is added for that reason. The automotive grade is suppose to make you sick if you try to sniff it :D2004 CE Corvette 10.86@132mph
