If I open the bottle, the pressure will go up, and will stay up after I close it. After a couple hours though, the pressure will drop to zero. Is this normal or do I have a leak?

It will eventually lose pressure.
If you had a leak as soon as you turn on the bottle you would hear it and/or you would see a lot of frost around the leak.
Normally if you turn the bottle on at night, pressurize the line and turn the bottle off that night and wake up the morning and check it you could have a much lower psi or empty in the nitrous line.
