The tire width of 235's is 9.25", and you're thinking of putting them on 7.5" wide rims. Personally, I wouldn't. Can it be done? Yes, but I wouldn't recommend it.
The widest tire I'd go with on a 7.5" wide rim is 225's. This is just my opinion though.
Yea, hockeyman is right. You'd have issues with tire roll, because you'd be going to a wider tire, but less distance from the edge of the rim to the outside edge of the tire. It would work, but you'd lose some handling.
Would 235/55/16 tires mounted on 16x8 Camaro rims fit on 16x7.5 steelies that normally have 215/60/16 tires?

Reality is that most tire companies who make 235/55-16 tires recommend they be mounted on a wheel from 6.5-8.5-in. with 7.5-in or 8.0-in wide as the ideal wheel so...yes, those 235s will work find on your 16x7.5s as long as the backspacing is not all that different.
