The only way to get something "in between" is to opt for adjustables, and even then the spring rates that you would use front and rear for drag vs. auto-x are very different.
If you are looking for a car that handles well on the street, Bilstein HDs and Eibach Pro-kit springs make for a pretty good combo.
I've sung the praises of Bilstiens quite a few times on this forum, but I must admit that I have no experience with the KYB's. I've heard some really good things about them though. From what I hear, you really can't make a bad call here.

I would go with the adjustables. I put Bilsteins on my 96 RS and love the way the car handles, but I would have went with adjustable shocks if I had the extra coin. The Bilsteins are stiffer than stock, but not unbearable. The KYB's gas adjust shocks on my 69 camaro are much firmer than the Bilsteins I put on my 96RS. I also put KYB's GR2 struts on my z24 and the car handles much better. The ride is firmer, but no where near harsh. I think they are a decent strut for the money.
I heard that the KYB AGX say that they are adjustale but they are not as adjustable as other shocks is this true?
should i go with single or double adjustable?
what are other good adjustable shocks? (Konis are way to expensive)
