I have a 98 firebird and have stock rims i think are 16x8 so do es anyone know if these rims will work without rubbing the fenders http://www.mickeythompsontires.com/press_11_17_03.html

I'm pretty sure they won't rub. Especially with the 255/50/16s, they won't rub for sure. I think the stock tire size was 215/60/16 and some got the 235/55/16 tires and there is stil a lot of room to play with.
