How do you know what size tires will fit well on a rim? I have some 18x8's they currently have 245/40/18 but supposedly this means my speedo is off a little if I get 255/40/18's the difference nearly disappears. I don't want the tire to noticably stick out beyond the rim, someone once posted a pic where the tire was puffed out don't like the look myself.

Most people go with a 25.7" diameter.
245/50 16x8
245/45 17x8
275/40 17x9.5
245/40 18x8
275/35 18x9.5
If you're trying to match exactly the stock 26.1" diameter of the 235/55R16 then just add 10mm to the width of those sizes above.
