My V6 is not much lighter than my Z, if any. I don't remember what my V6 weighed when I had her at the track, but she is a bare bones car (no power options and 5 speed). My Z has power windows/doors and leather, but hard-top and an M6 and it was pretty light at 3390 (for an F-body).
I don't see how a V8 car will feel heavier. I have driven both obviously and if anything the V6 car feels heavier due to the weaker springs and sway bars. It is a noticeable difference in the curves.
