Is there any major difference between the two as far performance goes? Judging by looks the three point would definitely offer more support to the chassis than the 2 point. Is there any real "seat of the pants" feeling difference?

That would be a tough one to answer right. You'd have to have two similar cars (coupe, t-top, convertible; similar age) and test them back to back.
But everyone seems to love their sfcs so I doubt there's a huge difference. The 2-points tend to use beefier material than the three points.
All that said, I got three points because it's clearly a better engineering solution.2000 Firebird convert, chameleon/tan, M5, Y87, TCS, BMR tower brace and panhard, KBDD sfcs, 245/50-16 GSCs

I don't think anyone will have a definitive answer for you. Some say if you are just drag racing 2 point are all you really need and if you are road racing or auto-x then you should look at the 3 point. Since no one has tested both and done any sort of write up I would just go with what your budget allows, what kind of ground clearance you are looking for, and add the costs to get them welded by someone who knows what they are doing. I have never heard anyone complain either way so I wouldn't worry too much about your choice.
