I was talking to a guy at a speed shop today and he told me that the 190 would support up to 400hp and a 255 over 500hp. He also said that a 255 works harder so a 190 would stay cooler and last longer. Is there any reason to go with the 255 rather than the 190? I'm thinking very hard about a 100 wet shot but still with that and the cam I shouldn't be up near 400hp right?

Well I would like to do the same but if it's pointless over kill then maybe not. I was told the 255 works harder and builds up more heat. I would think that extra heat might even hurt performance. I have a walbro 255 on the shelf waiting installbut The inline blower pump is doing the job fine for now.
I have the same opinion, for the price you might as well go with the 255.
